Shiso leaves are a wild plant, also known as perilla leaves, originating in southern China. Since the 17th century, they have been collected for use as food. There are two types of leaf: red shiso and green shiso. This pigment changes to red when it comes in contact with acid or air, so the acidity of umeboshi plums changes their original color to red. It is recommended to take two or three times a week chewing them or mixing them in crumbs with other foods.
